Slovak Onion Strudel
From Zuzana Bates (IRES'95) from Slovakia.

Ingredients:
Filo pastry, 500g onion thinly sliced, olive oil, 4 garlic cloves thinly sliced, 150g (approximately) chopped bacon, 4 chopped basil leaves, curry powder, 1 egg, 50 ml beer, 200g grated hard smoked cheese, 50g grated hard non-smoked cheese.

Instructions:
First fry the onion in olive oil, then add garlic, curry powder, basil, bacon and continue frying for about 10 minutes (stirring all the time). Leave to cool down. Mix the raw egg with the beer. Grate the cheese. Put the fried onion mix on the pastry, adding the cheese on the top (leaving a bit of the non smoked variety for later) and roll into a neat strudel. Close the ends. Put onto a baking tray and add the egg/beer mix on top. Bake for about 30 minutes in a preheated oven (220 C). During baking, when the strudel starts to brown, put on the remainder of the grated non-smoked cheese and allow to finish. Remove from oven and cut away the ends, as necessary.
